The Vintage
The 2016 vintage started in late March, which was an average time of year to harvest our white grapes. The growing season experienced average winter rainfall and temperatures were mild. The summer was mild with small amounts of drizzly rain. Birds were their usual hungry selves, so all vines were netted to prevent bird damage and disease. This resulted in clean, ripe and well balanced fruit. Harvesting was once again a challenging time, with unseasonal cold fronts bringing much rain. We successfully harvested all white grapes; however it was a different story for the reds. The fruit cropped at an average of 4.0 tonne per hectare.
The Winemaking

The Semillon & Sauvignon Blanc was harvested to achieve maximum fruit complexity and flavour. The fruit was de-stemmed, basket pressed, and then cold fermented at 15 ºC in stainless steel tanks for 3 weeks. The wine was not wooded and bottled early with stelvin closures to preserve the vibrant fruit flavours.
